With a name as cute as Pumpernickel, I can't help but not to ignore this recipe. Bits of cocoa power, instant coffee and molasses into the no knead recipe... whalllaaaa.... tasty, tasty yummy bread!
I've been eating and drinking waaay too much for the past few days, its bordering on ridiculous!
This is gonna be my "healthy" dinner for the next few days as the better half is out on business. Gonna pair it up with beer butt chicken and plenty of fresh salad.
Here's a shot of the "shaped" dough all risen. I still suck in the dough shaping department but I'll get there!
Did a corn starch wash over and slice it up with parallel cuts.
Out from the oven! Delicious looking thing....

Looks good to me! Infinitely better than the grocery store pumpernickel bagel that I had for lunch today.
It seems that because the no-knead dough has a much higher hydration (much wetter), your dough is spreading out and losing its shape by the time you put it in the oven. You can try to proof it in a banneton/brotform... or really, just upside down in a basket lined with a tea towel that's dusted with flour, and it will be able to maintain its shape better. Good luck with the shaping!

toxobread: thanks for the tips. I've just tried your method, the shape holds pretty much better now. Just that I overdid the dusting department and the whole bread now is covered with flour lol! Need to practise more!

tavolini: this is the first time I did a wash so I can't really tell the difference BUT it does leave behind those white stains on the crust! :)
