Who would've thought that cooking a nice tasty chicken curry would be so easy to the point of no kitchen skills involved?
1 pack of A1 Best One meat curry paste(I'm not sure of this other Action One A1 but I'll try the next time to see which one is better, don't get mixed up with the other company making A1 Bak Kut Teh spices)
1 chicken(you can buy it prechopped or carve it up yourself)
2-3 medium potatoes, skinned
1 small packet of coconut milk
No prefrying of the curry paste required as its all done nicely, just plop the paste into the 500ml water, boil, add chicken, boil, add potato, boil, add coconut milk, boil and tadaaaa... yummy curry chicken. Taste great with slices of baguette.

hahaha! its easy to use prepared curry paste, but never as good as self-made one. lol

to make a perfect self made curry, one needs a super good recipe which many do not have access to...
I've given up on trying to make the perfect best self made curry which usually ends up with an extremely oily kitchen due to all that frying and prefrying.
A1 does it for me! And it taste good enough for me. Way better than any economical rice curry and that to me is good enough, ;)
No pre-frying, hmmm! :) Heh, I can't seem to find the paste in my neighbourhood. You got from Sheng Shiong ha?
camemberu: oh yeah, Sheng Siong but my friendly neighbourhood TCM shops sells them too. If you got problem getting em let me know, next outing pass some to you.
Hi there just my two cents. I don't make my own curry paste but I seem to do a few things diff. than every other recipe I've read. After buying the most potent smelling curry powder I can find, I then prepare my chicken by dredging the chicken in a small amount of flour and then pan searing it until the skin is browned. I then add one WHOLE diced onion, one WHOLE green bell pepper, baby carrots, and a few large potatoes peeled and chunked.
I place all of these things in a large pot with chicken broth just to cover it. Then I put at least 4 tbls. of curry powder, 1 tbls. of cumin powder, onion powder, garlic powder, salt and cracked white pepper.
I'm not sure if I do it "right or wrong" but I'll tell you what! Served over rice it is the best dang curried chicken and veggies I've EVER had. Anyone who's ever eaten it doesn't stop at one heaping bowl. :)
